MARSHFIELD, WI (OnFocus) – Juicy peaches, savory bacon and creamy burrata come together to create a simple, succulent appetizer or snack!

INGREDIENTS

  • Parchment paper
  • 1 baguette, sliced
  • Olive oil, 2 Tbsp. plus additional for brushing
  • 3 peaches, diced
  • 3 slices cooked bacon, crumbled
  • 3 Tbsp. chopped fresh basil
  • 4 oz. burrata, torn into pieces
  • Balsamic glaze, for topping

DIRECTIONS

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper. Place baguette pieces on prepared baking sheet and brush both sides with olive oil. Bake for about 15 to 18 minutes or until golden brown, flipping during the last few minutes of baking.
  2. In a medium bowl, toss together peaches, bacon, basil and 2 Tbsp. olive oil. Set aside.
  3. To assemble, place burrata pieces on baguette slices, then top with peach mixture. Drizzle with balsamic glaze and serve immediately.
