MARSHFIELD, WI (OnFocus) – Nothing screams “summer” like a juicy plum – especially when it’s surrounded by crisp veggies and a zingy dressing!

INGREDIENTS

  • ¼ cup olive oil
  • 1 lemon, juice of
  • 1 Tbsp. dijon mustard
  • 1 tsp. honey
  • 1 tsp. grated fresh ginger
  • Salt, to taste
  • Black pepper, to taste
  • 5 oz. spinach or arugula
  • 2 plums, halved, pitted and sliced
  • ½ English cucumber, sliced
  • 1 heirloom tomato, quartered and sliced
  • ⅓ cup feta or goat cheese
  • ¼ cup walnut pieces

 

DIRECTIONS

  1. In a small bowl, whisk together olive oil, lemon juice, dijon mustard, honey, ginger, salt and black pepper. Set aside.
  2. In a large bowl, toss together spinach or arugula, plums, cucumbers, tomatoes, cheese, walnuts and prepared dressing. Serve immediately.
