MARSHFIELD, WI (OnFocus) – Nothing screams “summer” like a juicy plum – especially when it’s surrounded by crisp veggies and a zingy dressing!
INGREDIENTS

¼ cup olive oil

1 lemon, juice of

1 Tbsp. dijon mustard

1 tsp. honey

1 tsp. grated fresh ginger

Salt, to taste

Black pepper, to taste

5 oz. spinach or arugula

2 plums, halved, pitted and sliced
-
½ English cucumber, sliced
-
1 heirloom tomato, quartered and sliced
-
⅓ cup feta or goat cheese
-
¼ cup walnut pieces
DIRECTIONS
- In a small bowl, whisk together olive oil, lemon juice, dijon mustard, honey, ginger, salt and black pepper. Set aside.
- In a large bowl, toss together spinach or arugula, plums, cucumbers, tomatoes, cheese, walnuts and prepared dressing. Serve immediately.
